Nutella Shortbread Sandwiches

I fell in love with Nutella when we spent 2 weeks in Rome last April. The little bakery down the street from our apartment had at least 4 different kinds of nutella desserts at all times and nearly every night we'd stop and get a few to share on our rooftop terrace for dessert.
This last week, while doing our weekly Costco run, my loving husband noticed my longing gaze towards the giant nutella jars and bought them for me! To celebrate, I decided to make leaf shaped shortbread cookies and slap them together with a nice blob of nutella in the middle.
The first bite took me right back to our terrace in Rome, listening to the church bells ringing, and watching the sun set over the red tiled roofs... pure bliss!

Nutella Shortbread Sandwiches
Makes about 12 sandwiches

2 cups flour
1 cup ( 2 sticks) butter (add a pinch of salt if using unsalted)
1/2 cup powdered sugar
Approximately 2 cups Nutella for filling

1. preheat oven to 350 degrees
2. using a pastry cutter mix ingredients until you can form a ball with the dough, then flatten into a disk, and chill 20 minutes
3. roll out dough between two sheets of parchment or wax paper until about 1/4 inch thick and cut into desired shapes
4. put cookies on an ungreased cookie sheet and chill again for about 15 minutes (this helps them keep their shape as they bake)
5. bake at 350 degrees for about 10 minutes or until light brown and cool on racks
6. after cookies are completely cool, spread nutella to the underside of one cookie, then press another cookie on top to create a sandwich and enjoy!
