Potato Pancakes

I like to make these whenever I have left-over mashed potatoes... since this rarely happens, sometimes I make extra just to make sure I have some left for these crispy little cakes! They're great for breakfast or served as an appetizer!

Potato Pancakes
Makes about 2 dozen 

4 cups leftover mashed potatoes
2 eggs
2 teaspoons onion powder
2 teaspoons garlic powder
3-5 tablespoons flour (depending on how thick the potatoes are)
1/2 cup shredded cheese

1. combine beaten eggs, onion, garlic, cheese, and potatoes
2. stir until well mixed
3. add flour one tablespoon at a time until desired consistancy is achieved
4. using floured hands, form the mixture into meatballs, flatten into patties and dust both sides with flour
5. fry in a well-buttered pan over medium heat, until brown and crispy on both sides
(remember to add more butter to the pan in between batches to keep them from sticking to the pan)
