Spinach Prosciutto Calzone

I made one giant calzone this time, since I was just cooking for the two of us, but next time I might split the ingredients and make four individual calzones. They would cook faster and be easier to take in a lunch the next day! Either way, it's a deliciously flavorful, quick Italian dinner!

Spinach Prosciutto Calzone
Serves 4

1 pound bread or pizza dough
1 pound ricotta cheese
2 cups fresh baby spinach leaves, steamed
1 cup grated mozzarella
3 oz thin sliced prosciutto
1 1/2 cups marinara sauce

1. roll out pizza/bread dough into a circle
2. leaving a 1/2 inch border, on one half of the circle put the ricotta, then spinach, then mozzarella, then prosciutto
3. fold the other half of the dough circle on top and seal sides by pinching the edges closed
4. cut slits on top to vent, brush top with melted butter and sprinkle with parmesan
5. bake at 350 for 40 minutes or until golden brown
6. slice into wedges and top each one with a few spoonfuls of marinara sauce before serving
