Caramel Apple Cupcakes

I wanted to make a Caramel-Apple flavored dessert for Halloween and these came out perfectly! I love that the cupcakes are super moist from the applesauce with tender bits of apple nestled inside the spiced cake. And the frosting? I could eat a bowl of it- a cool, creamy version of home-made caramel! Ooo la la!

Caramel Apple Cupcakes
Makes 24

(adapted from Martha Stewart's Applesauce Spice cupcake recipe)
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon freshly ground nutmeg
1/8 teaspoon ground cloves
1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
1/2 cup packed light-brown sugar
4 large eggs
1 cup applesauce, at room temperature
2 cups finely chopped apples

1. Preheat oven to 350 degrees.
2. Sift flour, cinnamon, baking soda, salt, nutmeg, and cloves together into a medium bowl. Set aside.
3. Cream butter and both sugars in another bowl with an electric mixer.
4. Mix in eggs, one at a time.
5. On low speed, mix in applesauce and then flour mixture until just combined.
6. Stir in chopped apples by hand.
7. Divide batter among muffin cups, filling each about three-quarters full. Bake until a cake tester inserted in centers comes out clean, 18 to 20 minutes. Let cool completely in tins on a wire rack.

Caramel Frosting
2 cups light brown sugar
1 cup heavy whipping cream
1/2 teaspoon baking soda
1/2 cup butter

1. In a medium saucepan, bring the sugar and cream to a rolling boil. Boil one minute. Add soda, and boil one more minute. Remove from heat. Add butter, but do not stir yet. Let the mixture cool in fridge until completely cool.
2. Beat well. Stir in a tablespoon of cream and powdered sugar, adding more, a tablespoon at a time until desired consistency is reached.
3. Frost cupcakes immediately before serving and store any uneaten ones in the refrigerator (assuming you have any left!)
