Cinnamon French Toast


We love French Toast! It's an easy and tasty Saturday morning treat that is actually surprisingly well balanced nutritionally (minus the syrup)- eggs, milk, bread, fruit or nuts- good stuff!

Cinnamon French Toast
Makes about 18 slices

1 loaf of sliced bread (I use cinnamon raisin bread- yum!)
7 eggs (or the equivalent amount of egg white substitute)
1 cup milk
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract

1. whisk together the eggs, milk, cinnamon, and vanilla in a shallow baking dish
2. heat a frying pan until water sprinkled on it dances and sizzles (about medium heat)
3. dip a slice of bread in the egg mixture, allowing both sides to soak for a second or two, then place the frying pan
4. cook both sides of the bread until brown and cooked through, about 3 minutes each side, adding a little butter to the pan if they begin to stick
5. repeat the process until the mixture or bread is gone and serve hot with butter and a sprinkle of powdered sugar, or maple syrup!
