Easy Chile Rellenos


The Man loves Chiles Rellenos, so being the good wife that I am, I searched my favorite blogs for a recipe to make them for him. As soon as I saw the name of this recipe by Pioneer Woman, I knew I'd have to try it. Wrapped in a warm tortilla, these make a yummy, spicy breakfast burrito. Although I am still looking for a 'real' Chiles Relleno recipe, this breakfast version was a big hit in the meantime!

Lazy Chile Rellenos (adapted from Pioneer Woman)
Serves 6

3 cans (8+ whole) green chiles, roasted, peeled, and seeded
2 cups whole milk
1/4 teaspoon cayenne pepper
1/2 teaspoon paprika
salt/ black pepper to taste
5 large eggs
3/4 cup shredded cheddar
3/4 cup shredded monterey jack

1. mix together milk, eggs, salt, pepper, paprika, and cayanne, set aside
2. cut chiles in half, take out seeds, and lay in one layer on the bottom of a 9x13 pan
3. sprinkle cheddar on top
4. make another layer of chiles on top of the cheese
5. sprinkle monterey jack cheese on top
6. pour egg mixture over the top of the whole thing
7. set the 9x13 pan in a shallow baking dish or rimmed cookie sheet with 1/2 inch water in the bottom
8. bake at 325 degrees for 35-45 minutes, until completely set
9. cut into squares and serve with warm tortillas wrapped around them!
