Egg Nog Glazed Pumpkin Cookies

I was in the mood for some pumpkin cookies the other night and needed to use up some canned pumpkin, so I pulled out my mom's recipe for pumpkin cookies and whipped them up. While they were in the oven, I realized I had no milk to make the glaze... but I did have egg nog... boy did that substitution turn out well! Yum! Next time I will be using egg nog again for SURE!

Egg Nog Glazed Pumpkin Cookies
Makes about 3 dozen

2 1/2 cups flour
1 1/2 cups sugar
1/2 cup butter, softened
1 cup canned pumpkin
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 egg

1. combine dry ingredients and mix well
2. add wet ingredients and stir to combine
3. place in heaping spoonfuls on greased cookie sheets and bake at 350 degrees for 15 minutes

2 cups powdered sugar
3 tablespoons eggnog

1. mix the sugar and eggnog and drizzle over completely cool cookies

    I made a couple substitutions you may want to try:

    Used half white sugar and half brown sugar.
    Added a tsp of vanilla to the batter.
    Doubled the cinnamon and salt.
    Doubled the eggnog (the icing set up very hard at first) and the glaze set very well.
    Added nutmeg to the glaze.
