Mint Oreo 'Truffles'

I saw this recipe on kraftfoods.com and because my lovely husband and I have a weakness for Oreos (and they were on sale this week!) I had to try it. The recipe called for regular Oreos, but since we love the mint ones, I used those instead and used green melting chocolate for Halloween. Yum!

Mint Oreo 'Truffles'
Makes about 3 dozen

1 package mint Oreos
1 eight ounce package of cream cheese
14 ounces or so of melting chocolate

1. crush oreos in a food processer or ziplock bag until only fine crumbs remain
2. combine crumbs with softened cream cheese until well combined and form into small 1 inch balls
3. chill in the freezer on a wax paper covered cookie sheet while melting the chocolate
4. dip each ball into the chocolate, rolling it around with two forks, use one fork to lift out and tap off extra
5. sprinkle a few sprinkles, etc. on top to decorate if desired and let balls dry on the wax paper covered cookie sheet in the refrigerator for about one hour
5. once balls are dry, store in tightly covered container in refrigerator until ready to eat!
