Pumpkin Pancakes with Cinnamon Butter

I adapted this recipe from one I found on allrecipes.com and these pancakes came out so yummy! I decided to make some cinnamon butter to accent up the flavors in the pancakes and they were so delicious I didn't even want to use syrup!

Pumpkin Pancakes
Makes about 16

1 cup canned pumpkin
1 1/2 cups milk
2 tablespoons lemon juice
1 egg
2 tablespoons oil
2 cups flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger

1. mix together the pumpkin, milk, egg, oil, and lemon juice in a large bowl until well combined
2. add dry ingredients and stir until just mixed (don't over mix!)
3. use a 1/4 cup measuring cup to scoop batter into a buttered frying pan on medium heat, cook both sides until golden brown and serve hot!

Cinnamon Butter
1/2 stick of butter (softened)
1/2 teaspoon of cinnamon

1. stir together the softened butter and cinnamon
2. spread on pancakes and enjoy! :)
