Crisp Spinach Parmesan Cakes

These crispy little cakes are SO yummy! I'm not a huge fan of spinach in general, but these babies... between the man and the munchkin I had to fight for a few of them before they disappeared! I love how they are crisp on the outside and soft and creamy inside... a perfect finger food and packed with nutrients!

Crisp Spinach Parmesan Cakes
Makes about 16

1 package frozen chopped spinach or 3 pounds fresh spinach, cooked and water 'squeezed' out
1 egg
1/4 cup grated Parmesan cheese
1/4 cup flour
a pinch of salt
1/2 cup Panko bread crumbs
1 teaspoon garlic powder

1. squeeze out any extra liquid from the spinach and stir into beaten egg
2. in a separate bowl combine the remaining ingredients and stir in the spinach and egg mixture until well mixed
3. drop by spoonfuls into a buttered frying pan on medium heat, flatten with the back of the spoon, and cook until both sides are crisp and golden brown
4. enjoy while hot! :)
