Stuffed Parmesan Mushrooms


These tasty little mushrooms are perfect for dinner parties, or just dinner! Every time I've made them, people have asked if there's meat in the filling... they can't believe that something vegetarian could be so tasty and flavorful! These can be made several hours ahead of time, covered with plastic wrap and refrigerated. Just pop them in the oven 15 minutes before you're ready to serve them! Yum!
Makes 12



Stuffed Parmesan Mushrooms



12 large mushrooms
1 tablespoon butter
1/2 teaspoon salt
1 small onion or 1 tablespoon onion powder
1/8 teaspoon cracked black pepper
1 tablespoon parsley
2 tablespoons Parmesan

1. Wipe mushrooms clean and cut off stems, set stems aside.
2. Saute mushrooms with butter until tender.
3. Place mushrooms hollow-side up in a greased baking dish.
4. Chop stems finely, mix in onion, pepper, and salt and saute until tender.
5. Stir in cheese and parsley and fill mushrooms with the mixture.
6. Bake at 375 degrees for 12 minutes and serve immediately.
