Creamy Broccoli Cheddar Soup


This soup is a great way to hide veggies from a kid (or husband!) and it tastes so good the only fight you'll have is who gets the last scoop! I pureed it to make it creamy, but you could also leave it chunky- either way it is delicious and nutritious!

Creamy Broccoli Cheddar Soup (adapted from foodnetwork.com)
Serves 6

1 tablespoon olive oil
1 medium onion, chopped (about 1 1/2 cups)
2 medium potatoes, peeled and chopped (about 1 1/2 cups)
2 stalks of celery, chopped (about 1/2 cup)
1/2 pound carrots, chopped (about 1/2 cup)
2 cans of chicken broth (about 3 1/2 cups)
1/2 pound broccoli florets
1 tablespoon garlic, minced
cracked black pepper and salt to taste
1/8 teaspoon cayenne pepper
2/3 cup sour cream
1 1/2 cups shredded cheddar cheese
1. put oil, celery, and onion in a medium saucepan and saute over medium heat until soft
2. add potatoes, carrots, salt, black and cayenne pepper, and garlic and continue cooking for about 5 minutes
3. add broccoli and broth and simmer until broccoli is tender (about 20 minutes)
4. puree in the pot using an immersion blender until creamy
5.add sour cream and cheese and stir over low heat until bubbly.
6. serve hot, with bread
