Peppermint Shortbread Cookies

My mom makes these every year and now, so do I! It doesn't feel like it's really Christmas until I'm sitting next to our sparkling Christmas tree at night, listening to carols, with a cup of eggnog and a couple of these cookies!

Peppermint Shortbread Cookies
Makes about 2 dozen

2 1/4 cups flour
1 teaspoon peppermint extract
1/4 teaspoon salt
1 cup powdered sugar
1 cup butter (softened)

1. mix together all ingredients with your hands until well mixed and form into a ball
2. lick fingers clean- yum! (this step is optional, but who in their right mind would skip it?!)
3. chill the dough ball for 2 hours
4. shape into walnut sized balls and flatten
5. bake on an ungreased cookie sheet for 7-10 minutes, but DO NOT BROWN!
6. cool completely and then drizzle with peppermint icing
7. enjoy! :)

Peppermint Icing

1 teaspoon peppermint extract
1 cup powdered sugar
3 drops of red food coloring
1 1/2 tablespoons milk

1. mix well and drizzle over cool cookies
2. that's it! :)
