Garlic Cheddar Mashed Potatoes

These fluffy, cheesy mashed potatoes just beg to be eaten with a juicy steak or nice piece of fish! They are packed full of flavor and don't take long to make! Be sure to make more than you'll need- you won't have any leftovers!

Garlic Cheddar Mashed Potatoes
Serves 6

8 medium potatoes, peeled and chopped (approx. 8 cups)
1 stick of butter, cut into small pieces
2 teaspoons minced garlic
1 cup shredded cheddar cheese
2 teaspoons dried parsley
2/3 cup sour cream

1. boil the chopped potatoes in salted water until tender when pierced with a fork
2. drain potatoes and add butter and garlic
3. beat until creamy with no lumps
4. add cheese, parsley, and sour cream and beat until well mixed
5. devour! :)

  1. Thanks for this recipe and reminder-good food is simple. I have researched garlic mashed potato recipes and all of them say to roast the garlic, etc... Your's is simple and used items on hand and tastes delicious. Great job.
