Gingerbread Waffles

Although spring is right around the corner, this morning was cool and foggy and I decided to make waffles for the Man and the Munchkin. Rather than stick with plain, boring, regular waffles, I added some spices and these turned out like delicious gingerbread! We enjoyed them with butter and hot maple syrup, but they would also be great with a little whipped cream!

Gingerbread Waffles
Makes 2 dozen

4 eggs
3 cups all-purpose flour
1 cup whole wheat flour
4 tablespoons brown sugar
3 1/2 cups of milk
1 1/2 teaspoons vanilla
2 teaspoons cinnamon
3/4 teaspoon nutmeg
3/4 teaspoon ground ginger
1/8 teaspoon salt
2 tablespoons and 2 teaspoons baking powder

1. in a large mixing bowl whisk eggs until light and fluffy
2. add milk, vanilla, and spices and whisk until well mixed
3. add flour and sugar and whisk together until just combined
4. place 2/3 cup of batter at a time in a preheated, greased waffle iron and cook until it stops steaming (about 5 minutes)
5. remove and continue using the rest of the batter in the same way
6. serve hot with butter and maple syrup!
