Chicken Tortilla Soup in the Crockpot!

This soup is amazing! Not only does it take minutes to make, but it tastes incredible! The flavor from the Mexican rice mix was perfect for our toddler, but feel free to add some chili powder or cayenne pepper if you want to kick up the heat!

Chicken Tortilla Soup in the Crockpot
Serves 4-6

2 chicken breasts (cooked and chopped)
1/2 bag frozen corn
1 can low sodium black beans (with liquid)
1 can diced tomatoes with peppers (with liquid)
2 cans low sodium chicken broth
1 can of water
1 package Mexican flavored rice, uncooked

sour cream
shredded cheese
tortilla chips (broken into small pieces)

1. place all ingredients in the crockpot except sour cream, cheese, and chips
2. stir to combine
3. cook on low for 6 hours or high for 3 hours
4. ladle into bowls and top with shredded cheese, a dollop of sour cream, and a sprinkle of broken tortilla chips
5. enjoy every last spoonful! :)

  1. I'm trying this as I write. I had a hard time with the Mexican Rice Mix. Was there a brand you used? There sure are a lot of cans.

  2. I use the Lipton rice sides mixes,or Rice-a-roni to save time, but you could also use regular rice and just add some chili powder, cayenne pepper, garlic and onion powder to add the spice to the soup. Hope it worked out for you! :)
