Mini Bacon Cheddar Quiche

These crispy outside- soft inside little quiche are the perfect size for little hands and make an easy brunch finger food! I love that you can completely change the flavor by just varying the ingredients! Some of our other favorite combos are broccoli, swiss, sausage, pepperjack, spinach, mushroom... the possibilities are endless! :)

Mini Bacon Cheddar Quiche
Makes about 4 dozen

6 eggs
2 cups milk
1 1/2 cups Bisquick
1/2 pound bacon (chopped, browned and drained)
1- 1 1/2 cups shredded cheddar cheese

1. whisk together eggs, milk, and Bisquick until well incorporated
2. pour into greased mini muffin pans
3. sprinkle bacon and cheese evenly into each cup
4. bake at 400 for 15-25 minutes or until a toothpick inserted comes out clean
