Healthy Banana Bread Muffins

My mom made this recipe for banana bread all the time while I was growing up. It's a great way to use up soft bananas and I like to make it in muffin form to make it easier for little hands to hold and nibble! :) Also, the addition of whole wheat flour adds extra fiber and the use of honey rather than sugar makes this a healthy and tasty snack for little tummys (and big ones too!).

Healthy Banana Bread Muffins
Makes 1 loaf or 1 dozen muffins

1 1/2 cups mashed bananas (about 3)
1/4 cup milk (add more if batter is dry)
1/4 cup honey
1/2 cup whole wheat flour
1 1/2 cups unbleached all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon

1. combine dry ingredients and mix well
2. add wet ingredients and stir to combine- adding more milk if necessary to create a smooth batter
3. pour into a greased muffin pan (or loaf pan)
4. bake at 350 degrees for about 15 minutes (50 minutes for loaf pan) or until a toothpick comes out clean
5. enjoy warm with a little butter! :)
