Chinese Chicken Salad

With the weather getting hotter and everyone getting ready for swimsuit season, salads are a delicious way to stay cool and healthy! I love making this salad for dinner when it's too hot to be cooking. It's quick, easy, and scrumptious! The crunch from the crispy noodles and sliced almonds, the sweet juicy oranges, and the tangy dressing prefectly complement each other!

Chinese Chicken Salad
Makes 2 meal-sized salads, or 4 side-salads

1 head Romaine lettuce (heart), washed and dried
1 chicken breast, cooked and chopped into small pieces
1/2 cup sliced almonds
1 can Mandarin oranges (11 ounces), drained
crunchy chow mein noodles
Asian dressing (I like Kraft Light Asian Toasted Sesame)

1. tear or chop lettuce into bite-sized pieces
2. add chicken, almonds, and a drizzle of dressing and toss to combine (add more dressing as needed)
3. top with oranges and a sprinkle of the crunchy chow mein noodles
4. dig in!
