Oven-Fried Zucchini Sticks

I love zucchini, especially fried zucchini! Now that they are easily accessible at both the grocery store and Farmer's Market, I've been making them frequently and decided to try to cut some of the fat and calories by baking them. These were deliciously crisp and tasty with a perfect salty hint of Parmesan and waaaay quicker to make! While, I'm still not going to completely give up my fried zucchini, these were great and will certainly be made many more times!

Oven-Fried Zucchini Sticks
Serves 4-6

2 medium zucchini
2 cups seasoned breadcrumbs
2 eggs, beaten
1/4 cup grated Parmesan

1. cut each zucchini in half and then each half into 4-8 sticks (depending on what size you want)
2. putting the beaten eggs in one bowl and breadcrumbs in another, take a few zucchini sticks and roll first in the egg and then the breadcrumbs to coat
3. spread out on a greased baking sheet and repeat for the rest of the zucchini
4. sprinkle all the sticks across the whole baking sheet with the grated Parmesan
5. bake at 350 degrees for 15 minutes or until golden brown and tender in the center when pierced with a fork
6. serve hot with a side of ranch dressing for dipping!
