Roasted Cherry Tomatoes Stuffed with Feta and Breadcrumbs

I picked up a pound of these juicy, sweet little gems at Farmer's Market and immediately imagined them roasted and stuffed with gooey cheese and crispy breadcrumbs. They were a perfect side dish for our dinner and would make a great little finger food for the next party I have!

Roasted Cherry Tomatoes Stuffed with Feta and Breadcrumbs
Serves 4 as a side-dish or 8 as an appetizer

1 pound cherry tomatoes, washed and dried
1/4 cup feta cheese
1/4 cup breadcrumbs
1/2 teaspoon dried parsley
extra virgin olive oil

1. slice cherry tomatoes in half, remove seeds, and set upside down on a paper towel to drain
2. mix together breadcrumbs, feta, and parsley in a small bowl
3. spoon breadcrumb mixture into the center of the drained cherry tomatoes and pat down gently to stuff
4. place stuffed tomatoes in a greased baking dish and drizzle the tops with a little olive oil (this makes the breadcrumbs nice and crispy!)
5. bake at 375 degrees for about 20 minutes or until tops are golden brown
