Chicken Satay with Peanut Sauce

I adore Thai food! Apparently this baby does to, because a lot of my pregnancy cravings have been Thai related so far. Thus this recipe. I wanted Chicken Satay, had the ingredients, and wanted to try out our new baby BBQ so... this version of yummy-ness was born! I loved how the coconut and curry flavors marinated right into the chicken! Because I didn't have red chili paste for the peanut sauce (and I was too lazy to go to the store), I threw a bunch of other stuff together that sounded like it would taste good and it worked! Delicious homemade Thai food! :)

Chicken Satay with Peanut Sauce
Makes about 3 main or 6 appetizer size

Chicken Satay:
2 boneless, skinless chicken breasts
1/2 can of coconut milk
2 teaspoons curry powder
1/4 teaspoon ground ginger
1/2 teaspoon garlic powder
1/4 teaspoon cumin

1. mix together all ingredients, except chicken, in a glass baking dish
2. slice chicken breasts into thin strips, place in the sauce and refridgerate for several hours to marinate
3. weave strips of meat onto wooden skewers (that have been soaked in water for an hour or more)
4. grill until no pink remains, about 4 minutes per side

Peanut Sauce:
1/8 teaspoon ground ginger
1/8 teaspoon red pepper flakes
a dash of cayenne pepper
1 tablespoon soy sauce
1/8 teaspoon seasoned rice vinegar
2 tablespoons peanut butter
1/4 cup coconut milk

1. blend all ingredients in a food processer until smooth and well combined and serve with chicken satay!
