Glazed Peach Pie

This glazed peach pie was overflowing with fresh, sweet peaches from our Farmer's Market and was sweet and cinnamon-y while still tasting light and fresh! So good that I forgot to take a picture until there was only a little left!

Glazed Peach Pie
Serves 8

1 9-inch pie shell, baked
7 cups sliced fresh peaches
3/4 cup water
1 cup sugar
3 tablespoons cornstarch
1 teaspoon vanilla
2 teaspoons lemon juice
1/4 tsp cinnamon
1 tablespoon butter
1. mash one cup of the peaches and combine with water, sugar, and cornstarch in a small saucepan
2. bring to a boil and cook for about 4 minutes, until mixture is thickened
3. remove from heat and stir in vanilla, lemon juice, cinnamon, and butter and cool completely
4. put about 1/3 of the glaze on the bottom and sides of the cooled pie crust
5. fill the crust with the rest of the sliced peaches and top with the remainder of the glaze
6. chill for at least 30 minutes and serve with a dollop of fresh whipped cream
