Spanish Rice

Once again, not wanting to go to the grocery store, I decided to make something from scratch that I'd never attempted before. Little did I know how easy and tasty this is to make at home! Soft and creamy, full of flavor, and with just a bit of a kick, this rice with some refried beans was a perfect topping for my homemade sopes! Even our 2 year old couldn't stuff it in her mouth fast enough! :)

Spanish Rice
Serves 6

1 tablespoon oil
1 onion, chopped (or 1 tablespoon onion powder)
1 clove garlic, minced (or 1/2 teaspoon garlic powder)
1/4 teaspoon paprika
2 dashes of cayenne pepper
1 cup long grained rice
1 cup chicken stock
2 cups diced tomatoes with liquid (a 14.5 ounce can)

1. saute garlic and onion in oil until soft
2. add rice and stir for a couple minutes
3. add chicken broth, tomatoes with liquid, and all the spices
4. stir to combine, put a lid on, and allow to simmer until rice is tender and liquid is absorbed (about 20-25 minutes)
5. remove from heat, fluff rice with a fork and serve!
