Chicken Salad Croissant Sandwiches

I had these yummy sandwiches at my girlfriend Tamara's house during a play date and LOVED them! While our toddlers played, we enjoyed the creamy chicken studded with crisp bits of sweet apple and tart cranberries packed into a flaky, buttery croissant! After begging her for the recipe, I made these for dinner on a hot day this past week. Perfectly tasty and refreshing!

Chicken Salad Croissant Sandwiches (from Tamara Henggeler)
Makes 6
2 cans shredded chicken (I got from Costco), drained
2/3 cup dried cranberries
1 apple, finely chopped
3 tablespoons mayo (more or less depending how you like it)
6 croissants

1. squeeze all extra water out of chicken and fluff with a fork into a large bowl
2. add mayo to taste until it has a spreadable consistency
3. stir in the dried cranberries and finely chopped apple until well mixed and refrigerate until right before serving
4. fill croissants with chicken salad mixture and enjoy immediately!
