Oven-Roasted Red Potatoes


These crispy little bites of red potato were delicious with our Pesto Tilapia! I love the crispy skin and tender insides flavored with garlic. So yummy and easy!

Oven-Roasted Red Potatoes
Serves 4

10 small red potatoes, washed and chopped into small pieces (use more or less depending on the size- you should end up with about 5 cups of chopped pieces)
2 teaspoons garlic powder
2 tablespoons olive oil
1 teaspoon dried parsley
salt and pepper to taste

1. cover a baking sheet with foil (this will save you about 3 hours of scrubbing in the long run!)
2. in a bowl drizzle oil on potatoes and toss with your hands to coat evenly
3. add garlic powder and again toss with your hands to evenly coat each piece of potato
4. spread out in a single layer on the foil covered baking sheet
5. sprinkle evenly with the parsley and salt and pepper to taste
6. bake at 400 degrees for about 30 minutes, or until fork tender, and enjoy!
