Chocolate Chip Cookie Dough Truffles

I love cookie dough! As a kid, my mom (who is a nurse) would tell us all the horrible things that could happen to us if we ate the cookie dough full of raw eggs. I sneaked bites anyway. When my best friend and I broke up with our high-school boyfriends, we sat with a tub of raw cookie dough and ate the entire thing with spoons while we cried and watched "Message in a Bottle". I didn't die. As a mature adult, I've been known to lick the occasional beater after making cookies (with my mother's voice ringing in my head the whole time!). It's never made me sick.
But now I'm a mom of a toddler. And 9 months pregnant. So in an effort to be more responsible, when I got the craving for cookie dough the other day I found this recipe and made it for my adorable 2 year old and myself. And there was much rejoicing! And because I needed a dessert to bring to a girl's night event at church, I dipped them in chocolate and called them truffles. And there was more rejoicing. What else can you do with edible cookie dough? Put it in ice cream, stick it inside cupcakes, put it in brownies, or fudge... or just grab a darn spoon and dig in! I'm sure you'll think of something. Enjoy! :)

Chocolate Chip Cookie Dough Truffles
Makes about 4 dozen

Chocolate Chip Cookie Dough (From Cupcake Project):

2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
4 tablespoons milk
1/2-1 cup chocolate chips

Truffle Coating: 2 bags Wilton's chocolate melts

1. beat together all cookie dough ingredients until well mixed
2. roll into quarter sized balls and place on a parchment covered cookie sheet in the refrigerator to firm up
3. melt the chocolate candy melts for the coating as the directions say and coat each chilled cookie dough ball, tapping off the excess chocolate with a fork before placing back on the parchment covered cookie sheet
4. repeat for all dough balls and store in the fridge until ready to serve
