Lemon-Blueberry Pancakes

In an effort to use our huge container of blueberries from Costco, I whipped these up for breakfast this weekend. These soft, fluffy pancakes have a hint of lemon and are filled with fresh juicy blueberries! Yum!

Lemon-Blueberry Pancakes
Makes about 8

1 egg
1 cup all purpose flour
3/4 cup milk
1 tablespoon granulated sugar
2 tablespoons oil
3 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon lemon zest
1 1/2 cups washed blueberries

1. whisk all ingredients except blueberries until smooth
2. butter griddle or frying pan
3. using a 1/4 cup measuring cup drop batter on pan and sprinkle berries on top, cook until brown on both sides and cooked through
4. serve with whipped cream, blueberry syrup, and more fresh blueberries- enjoy!
