Ooey-Gooey Berry Butter Cake


This cake is what I would always request my mom to make for my birthday as a kid. Full of juicy berries, with a built in frosting, this cake is tender, gooey, and crisp in just the right places! The perfect summer dessert whether eaten warm or cold! Yummy!! :)

Ooey-Gooey Berry Butter Cake
Serves 8

5 tablespoons melted butter
1/2 cup sugar
2 eggs
2/3 cup sour cream
1 cup flour
1/2 teaspoons baking powder
1/2 teaspoons baking soda
4 oz cream cheese (1/2 package), softened
1 1/2 c powdered sugar
1 cup blackberries
1/2 cup blueberries

1. beat butter, granulated sugar, and 1 egg until pale and thickened.
2. Beat in sour cream.
3. Combine flour, baking powder, and soda in another bowl and then beat into butter mixture until smooth.
4. Spread evenly in a buttered and floured 9-inch cake pan.
5. Bake in a 350 degree F oven until cake is pale golden and springs back slightly when gently pressed, 20 to 25 minutes.
6. Meanwhile, in bowl beat cream cheese, powdered sugar, and remaining egg until smooth.
7. Spread over cake and arrange blackberries and blueberries on top.
8. Bake until edges of topping are set and lightly browned but center of cake still jiggles when pan is gently shaken, 25 to 30 minutes.
9. Let cake cool completely on a rack then serve or, if making ahead, chill airtight up to 1 day.

    I love this recipe, its the 1st butter cake I've seen that doesn't call for a cake mix! WOO HOO!! I can't wait to try it myself :)
