Pesto Pizza with Zucchini and Mushrooms

While we were in Rome last year, we ate pizza at least once a day! Every where we went, the smell of cheese and hot crust drew us in from the street to shops filled with row after row of pizzas to choose from. My man would always choose one full of hot sausage and other kinds of meat, but I always looked for the veggie ones piled high with fresh zucchini! This was my attempt to recreate those delicious slices and the first bite took me right back to those cobbled Roman streets!    
Pesto Pizza with Zucchini and Mushrooms
Makes a 12 inch square pizza- Serves about 4

1 prepared ball of pizza dough
2/3 cup pesto sauce
6 ounces mushrooms, sliced thinly
2 medium zucchini, sliced into very thin rounds
2 cups shredded mozzarella and provolone cheese

1. grease a baking sheet with olive oil and preheat oven to 450 degrees
2. roll out/ stretch the pizza dough on a lightly floured surface into a square or circle until about 12 inches across and about 1/4 inch thick
3. place the thinly sliced zucchini rounds in a buttered frying pan and saute until crisp tender
4. spread the pesto evenly across the surface of the dough
5. sprinkle a thin layer of cheese across the whole thing
6. spread the zucchini evenly across the entire pizza and sprinkle the mushrooms evenly on top
7. sprinkle the rest of the cheese evenly over the top of the zucchini and mushrooms across the entire pizza
8. bake for 10 minutes or until cheese is melted and both cheese and crust are lightly browned
9. cut into pieces and enjoy!
