Chicken Quesadilla Roll ups

With an independent toddler, I'm always trying to think of quick and easy meal options that are nutritiously balanced, but that she can also eat by herself and even on the go. I love that these roll-ups are an easy way to 'sneak' in meat or finely chopped cooked veggies, they take seconds to make, and they can be dipped in sauces (which makes them infinitely more appealing to Chloe!). Another huge bonus, I can throw them in a baggie if we're in a hurry and they can be eaten mess-free by little hands in the car!

Chicken Quesadilla Roll ups
Makes 2

1 cup cooked chicken breast, chopped into tiny pieces
1 cup of shredded Mexican blend cheese (or cheddar)
2 tortillas
sour cream

1. sprinkle one tortilla with half of the chopped chicken and cheese
2. microwave for 30 seconds (or heat in a frying pan)
3. quickly, while the cheese is still melty, roll the tortilla into a small cigar shape
4. repeat for the second tortilla and serve warm with sour cream and salsa for dipping!

  1. Great roll-up idea. I have been making bento lunches lately and trying all different things and seeing what the kids eat or bring home for garbage. Your roll-ups look very promising.
