Chicken Fettuccini Alfredo with Mushrooms

Although I am Italian and LOVE eating Alfredo sauce when dining out, for some reason I had never tried to make it at home before. If I'd known it was so easy and delicious to make my own, I'd have done it looooooooong ago! I added some chicken breast and mushrooms and we had a delicious, fancy dinner at home in no time!

Serves 4-6
1/2 cup butter
2 cups heavy cream
1 clove garlic, minced
2 cups freshly grated Parmesan cheese
1 tablespoon chopped fresh parsley
1/8 teaspoon freshly ground black pepper
8 ounces fresh, sliced mushrooms

1 package pasta, cooked and set aside
2 chicken breasts, cooked and chopped into pieces

1. saute mushrooms in a buttered pan until just tender, then set aside
2. melt butter in a medium saucepan
3. add garlic and cream and simmer for 5 minutes
4. stir in cheese, pepper, and parsley and whisk until smooth
5. stir in mushrooms and chicken until mixed
6. pour over hot pasta, toss to coat, and serve immediately :)
