Eggnog French Toast


I LOVE eggnog! To me, taking that first sip ushers in the official start to the holiday season. Each year, starting November 1st, we have a constant supply of it in our refrigerator until that sad day, sometime in January, when I can no longer find it in the grocery store. This morning, while making our traditional weekend breakfast of french toast, I decided to try an eggnoggy version. Yum! The Man and Munchkin used maple syrup on theirs, but I drizzled mine in more eggnog... delicious!!

Eggnog French Toast
Makes 8 slices

1 cup eggnog
2 eggs
1 teaspoon pumpkin pie spice
8 slices of bread
1. whisk together the eggs, eggnog, and pumpkin pie spice in a shallow baking dish
2. heat a frying pan until water sprinkled on it dances and sizzles (about medium heat)
3. dip a slice of bread in the eggnog mixture, allowing both sides to soak for a second or two, then place the frying pan
4. cook both sides of the bread until brown and cooked through, about 2 minutes each side, adding a little butter to the pan if they begin to stick
5. repeat the process until the mixture or bread is gone and serve hot with butter, a sprinkle of powdered sugar, and a drizzle of maple syrup or eggnog!
