Pomegranate Cranberry Sauce

This Cranberry sauce is nothing like the jiggly stuff from a can. It is fresh, creamy, tart, and just sweet enough! Adding pomegranate juice makes it taste even better and adds an unexpectedly delicious twist on the traditional! It is a perfect side dish to turkey or ham, but its just as delicious spread on a toasted bagel with cream cheese or as topping to a cheesecake! The options are endless!

Pomegranate Cranberry Sauce
Makes about 5 cups

6 cups fresh cranberries (about 24 ounces)
2 cups pomegranate juice
1 cup of sugar, more or less to taste

1. combine cranberries, sugar, and juice in a medium saucepan
2. bring to a boil over medium heat and simmer until cranberries soften and burst, about 20 minutes, and mixture begins to thicken
3. cool and serve (it will thicken more as it cools)
