Chai Spiced Almonds

12 Days of Christmas treats- Day 5! These nuts were a hit with my mom, who loves chai tea as much as I do! The crunchy coating of sugar and spices make these an addictive holiday snack!

Chai Spiced Almonds
Makes 2 cups

1 egg white
1 tsp vanilla
2 Tbsp water
2 cups almonds
1/3 cup packed brown sugar
2 Tbsp granulated sugar
1 tsp Cinnamon
1 tsp Ground Ginger
1/2 tsp Ground Cardamom
1/2 tsp Ground Nutmeg
1/2 tsp Ground Cloves

1. whisk together egg white, water, and vanilla, and set aside
2. in another dish combine sugars and spices and mix well
3. toss almonds first in the egg mixture until all nuts are moistened, then toss in the spice mixture until nuts are all covered
4. spread nuts out in a single layer on a parchment paper covered cookie sheet and bake at 300 degrees for 30 minutes, stirring every 10 minutes, until dry.
5. Store in an airtight container
