Chocolate Shortbread Sandwiches with Peppermint Creme

12 Days of Christmas Treats- Day 4! These little sandwiches are delicious cold out of the fridge as well as dipped in cocoa! The chocolate shortbread isn't too sweet on its own, so the peppermint creme filling is the perfect accent!

Chocolate Shortbread Sandwiches with Peppermint Creme
Makes 16 sandwiches

Chocolate Shortbread (From Martha Stewart)
2 cups flour
1/4 cup cocoa powder
1/4 teaspoon salt
1 cup (2 sticks) unsalted Butter, softened
3/4 cup sugar
1 teaspoon vanilla

Peppermint Creme
2 tablespoons butter, softened
1 1/2 cups confectioners' sugar
2 tablespoons milk
1/4 teaspoon peppermint extract
2 drops red food coloring

1. cream together sugar and butter
2. add other ingredients and stir until dough forms
3. roll into balls and flatten with a glass dipped in sugar
4. bake at 400 for 8-10 minutes
5. cool cookies completely on wire racks and make creme by mixing all ingredients together until smooth, then refrigerate until cookies are completely cool
6. spread peppermint creme between two cookies and press together to form a sandwich, chill if creme gets too soft
7. enjoy at room temperature or cold out of the fridge (my favorite)!
