Pecan Streusel Topped Maple Yams


This holiday worthy dish is so good it's practically dessert! Smooth, maple sweetened yams are tucked under a crunchy layer of toasted pecan streuesel. Delicious!

Pecan Streusel Topped Maple Yams
Serves 8

 2 1/2 pounds yams (or sweet potatoes),peeled and cubed
1/4 cup cream
1/4 cup maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 egg, lightly beated

Topping:
1/4 cup flour
1/4 cup packed brown sugar
2 tablespoons butter, cut into small pieces
1/4 cup chopped pecans

1. preheat oven to 375 degrees
2. cover yams with water in a medium pot and bring to a boil, then simmer for 12 minutes or until tender
3. drain water then add cream, syrup, vanilla, salt and egg to the yams and beat until smooth
4. spoon into a greased 8x8 glass baking dish
5. in a food processor combine flour, sugar, and butter and pulse until mixture looks like coarse meal, then stir in pecans
6. sprinkle topping over yam mixture, cover, and bake at 375 degrees for 15 minutes, then uncover and bake another 25 minutes or until topping is browned and yams are hot
