Pomegranate Mousse Filled Cannoli

12 Days of Christmas Treats- Day 1! In my Italian family, cannoli are always part of our desserts at Christmas time! Usually I make a chocolate orange ricotta filling, but this time I thought a pomegranate mousse filling might be tasty! This recipe was easy and made a bunch- I'm already thinking of all the other things I could make using this mousse!


Pomegranate Mousse Filled Cannoli
Makes enough mousse for about 2 dozen
 1 envelope unflavored gelatin
1 cup sugar
2 cups heavy whipping cream
1 1/2 cups pomegranate juice

prepared cannoli shells
pomegranate seeds (for garnish)

1. in a small bowl put 1/4 cup pomegranate juice and the envelope of gelatin and allow to bloom
2. in a medium saucepan heat sugar and remaining cup of pomegranate juice until sugar dissolves then remove from heat
3. add the gelatin to the heated sugar/juice mixture and stir until dissolved
4. beat whipping cream until stiff peaks form and then add pomegranate juice mixture while continuing to beat
5. chill mousse for 2 hours until thickened
6. put mousse into a large ziplock bag and snip one corner
7. fill cannoli with mousse and garnish with pomegranate seeds, serve immediately
