Sugared Cranberries

12 Days of Christmas Treats- Day 6! These tart little treats make a perfect frosty-looking garnish to a festive cake or dessert in addition to being a tasty snack with it's crunchy sweet coating helping to tame the tartness of the juicy cranberry!

Sugared Cranberries
2 cups fresh cranberries
2 cups water
2 cups granulated sugar
3/4 cup superfine sugar (or make your own by running regular sugar through the food processor for a minute)

1. bring sugar and water to a simmer, stirring until sugar disolves (don't boil or cranberries will pop when put in)
2. remove from heat and stir in cranberries, then pour mixture into a bowl and refridgerate overnight
3. put superfine sugar in a shallow dish, drain cranberries into a colander, and then roll moist cranberries in the sugar to coat, a few at a time
4. spread sugared berries in a single layer on a parchment covered baking sheet and allow to dry at room temperature for an hour or more
5. store in an airtight container for up to a week
