BBQ Chicken Pizza

Whenever we go to California Pizza Kitchen, my favorite thing to get is their BBQ chicken pizza. Now that the Man and I are working out every day in an effort to lose weight, we're eating out less and I'm trying to recreate more of out favorites at home, cutting calories and saving money at the same time! This was my attempt tonight; soft doughy crust covered in tangy barbecue sauce, chunks of juicy chicken, and melty cheese... yum! It tasted just as good (or better!) than the real deal and cost less than $3 to make instead of $13!

BBQ Chicken Pizza
Makes one 12 inch pizza

1 or 2 boneless skinless chicken breasts, cooked and cut into small chunks
ounces pizza dough (I used Trader Joe's honey whole wheat)
1/2 cup and 2 tablespoons barbecue sauce
1 1/2 cups finely shredded cheese (I used a Mexican blend)
1cup thinly sliced red onion (I left this off since we don't like them)
1 tablespoon finely chopped fresh cilantro, for garnish (optional)

1. preheat oven to 450 degrees and in a small dish, toss the chunks of cooked chicken in 2 tablespoons of BBQ sauce and set aside
2. on a lightly floured surface, stretch out the ball of dough into a 12 inch square or circle
3. place the stretched out dough onto a lightly greased cookie sheet
4. using the back of a spoon, spread 1/2 cup (or more as needed) of BBQ sauce over the entire crust in a thin layer
5. sprinkle half of the finely grated cheese evenly over the surface of the crust
6. spread the chicken pieces (and onion if using) across the crust and sprinkle the rest of the cheese evenly on top
7. bake for 15-20 minutes or until cheese is melted and crust is golden brown
8. garnish with fresh cilantro and serve immediately!

  1. Yum sounds great! BBQ chicken pizza is one of my favorite homemade pizza types, too. So good!
