Chocolate Avocado Cupcakes

These chocolate cupcakes are not only fudgy, moist, and delicious, but they are full of vitamin-rich avocado! Although you cannot taste the avocado, it is the secret ingredient that makes these cupcakes so moist and delicious! I liked them best plain, but Munchkin enjoyed licking the fudgy avocado frosting off the tops before digging in- the perfect, sneaky, nutritious topping for this tasty dessert! :)

Chocolate Avocado Cupcakes
Makes 12

3 cups all-purpose flour
6 Tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
2 cups granulated sugar
1/4 cup canola oil
1/2 cup soft avocado, well mashed, about 1 medium avocado
3 eggs
2 cups water
2 Tablespoons white vinegar
2 teaspoons vanilla extract

1. Preheat the oven to 375F and line 12 muffin tins (or 24 mini muffin tins) with paper cups.
2. In a large mixing bowl, sift flour, sugar, cocoa, baking powder and salt.
3. In separate bowl combine the avocado, eggs, oil, milk and vanilla.
4. Add to the dry ingredients and mix with a rubber spatula until just combined; don’t worry about getting rid of all the lumps. Divide among the lined muffin tins, filling them almost full.
5. Bake cupcakes for 20 to 25 minutes or until cupcakes are springy to the touch. Remove to a cooling rack and allow them to cool completely if you’re going to frost them.

Chocolate Avocado Frosting
1 ripe avocado
2 tsp. lemon juice
4 cups powdered sugar
1 tsp. vanilla
1/4 cup unsweetened cocoa powder

1. In a medium bowl, mash the avocado; then add lemon juice, cocoa powder, and about a cup of powdered sugar and beat with an electric mixer to get rid of as many lumps as possible.
2. Add a couple cups of powdered sugar and the vanilla and beat until as smooth as possible, then continue adding more powdered sugar until you have a spreadable frosting.

  1. How many eggs? It's listed in step 3 of making the cupcakes, but not included in the ingredient list.
