Spicy Sausage and Shrimp Jambalaya

Eating a big bowlful of this spicy, Cajun dish is the perfect way to celebrate Mardi Gras with the family! Spicy, flavorful rice filled with fresh shrimp and juicy sausage makes this New Orleans' comfort food at it's best!

Spicy Sausage and Shrimp Jambalaya
Serves 6

2 cups rice
1 14 ounce can diced tomatoes with green peppers
1 pound Italian hot sausage/ hot links, cut into chunks
1 pound shrimp, raw (shelled, tails cut off, and deveined)
1/2 cup finely chopped onion
4 1/2 cups chicken broth
1 teaspoon salt
1/8 teaspoon cayenne pepper (more or less depending on how much heat you want)
1 clove garlic, minced
1/2 cup white wine
2 teaspoons dried parsley
3/4 cup finely chopped celery

1. In a medium saucepan on high heat, saute onion and celery in butter until soft then add rice and cook another minute
2. Add white wine and boil briskly for 2 minutes, then add remaining ingredients and stir to combine
3. Reduce the heat to medium, cover and cook until the rice is tender and most of the liquid is absorbed, about 25 to 30 minutes.
4. Serve and enjoy hot!
