Mint Oreo Brownies

Mint Oreos are one of my favorite cookies and I love brownies, so these Mint Oreo Brownies were a match made in heaven! These made an amazing St. Patrick's Day dessert; green creme filled, minty Oreos tucked inside the most delicious, rich, gooey brownies! Good luck trying to eat just one! :)

Mint Oreo Brownies
Makes about 24

1 cup (2 sticks) unsalted butter
2 1/2 cups sugar
4 large eggs
1/3 cups cocoa powder
1 teaspoon salt
1 teaspoon baking powder
2 teaspoons vanilla extract
1 2/3 cups flour
1 cup chocolate chips
18 mint Oreos, broken into pieces (plus an additional 3-4 as topping)

1. Preheat oven to 350 and grease a 9x13 pan.
2. In a medium saucepan over low heat, melt together butter and chocolate chips, stirring occasionally.
3. Whisk in sugar, salt and vanilla, then turn off heat.
4. Whisk in eggs one at a time, waiting until each is fully incorporated before adding the next.
5. Stir in flour and cocoa powder until mixture is uniform.
6. Stir in mint Oreo cookies and pour batter into prepared pan. Break 3-4 additional cookies into small pieces and sprinkle on top of batter, if desired.
7. Bake for about 35 minutes, until a toothpick inserted into the center comes out with moist crumbs, but not coated with batter.
8. Cool brownies in pan for about 20 minutes, then cut into squares and enjoy!
