Oatmeal Applesauce Mini-Muffins

These muffins are low-fat, full of fiber, and make a delicious and nutritious breakfast on the go! Fluffy, moist, and sweet, my toddler and I both loved these!

Oatmeal Applesauce Mini-Muffins
Makes 2 dozen mini-muffins

1 cup milk
1 cup quick cooking oats
1 egg, beaten lightly
1/2 cup unsweetened applesauce
1 cup all-purpose flour
1/4 cup honey
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

1. Preheat oven to 375 degrees and grease mini-muffin pan or line with muffin liners.
2. Combine milk and oats in a bowl and soak for 15 minutes.
3. Add beaten egg, honey, and applesauce and stir to combine.
4. In another bowl stir together flour, baking powder, salt, cinnamon, and nutmeg and the stir flour mixture into wet ingredients until just combined.
5. Spoon batter into prepared muffin cups until 2/3 full.
6. Bake for 20 minutes or until a toothpick inserted comes out clean.

  2. I just made these using Orgran No Egg replacer for my daughter who's allergic, and added sultanas too. They turned out great without the egg and yummy!
