Oatmeal Cookie Stuffed Baked Apples

These baked apples are the perfect dessert for a cold, rainy evening. Baked until they're soft enough to cut with a fork, the oatmeal mixture inside tastes like a chewy, delicious oatmeal cookie!

Oatmeal Cookie Stuffed Baked Apples
Serves 4

4 golden delicious apples
2 tablespoons brown sugar
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 cup oatmeal
1 tablespoon flour
1 tablespoon honey
4 tablespoons butter, softened and cut into chunks

1. Preheat oven to 425 degrees and grease a shallow baking dish.
2. Wash and core apples, removing the top 1 inch of peel from the top of the apple and place them inside the baking dish adding just enough water to the dish to just barely cover the bottom.
3. Combine sugar, nutmeg, cinnamon, oatmeal, and flour in a small bowl and stir until well mixed.
4. Stir in honey, then mix in butter with fingertips until a lumpy mixture forms and stuff equal amounts inside each apple.
5. Bake uncovered at 425 degrees for 30-40 minutes or until apples are fork tender and filling is bubbly and golden brown.
6. Allow to cool for 5 minutes then serve warm with ice cream or whipped cream!
