Poptart Pops

The Munchkin and I made these bite-sized poptarts to take to church and share with her little friends a couple weeks ago. She had fun helping me make them, frosting them when they were done, shaking on the sprinkles, and acting as quality control by sampling the finished product too! Anything on a stick is more fun, and these little homemade poptarts are delicious and fun little treats to make AND eat!

Poptart Pops
Makes about 18

1 pre-made pie crust
blueberry jam (or whatever flavor you like)
18 popsicle or lollipop sticks

1. unroll pie crust into a circle and cut off rounded edges so you are left with a rectangle of dough
2. cut the rectangle into squares and use the edges you removed to make additional squares, so you have 18 total (they should be about 2 inches by 2 inches)
3. press a popsicle stick or a lollipop stick into the bottom right side of the dough square to secure it
4. place a teaspoon of jam on top of the stick and fold remaining dough on top, like closing a book
5. use a fork to crimp all four edges of each rectangle to seal in filling and place on a parchment paper covered cookie sheet to bake
5. bake at 375 degrees, for 7 minutes, or until lightly browned; cool completely before frosting

Frosting Glaze:
1 cup powdered sugar
1 tablespoon blueberry jam
milk, start with a teaspoon
- Whisk together sugar, jam, and milk and add more milk as needed until it's the desired consistency.

Assembly:
-Spoon a teaspoon of glaze over cooled poptart pops and top with a dash of sprinkles. Allow to dry and then enjoy! :)
