In my weekend pancake-making, I'm always trying out new things on my family. These were a big hit! Fluffy, cinnamon spiced pancake surrounds the thin slices of banana that caramelize in the pan. A drizzle of warm honey over the top is the perfect topping and take these from 'yum' to 'YUM'!
Banana-Cinnamon Pancakes with Honey
Makes 8 medium pancakes
1 egg1 cup all purpose flour
3/4 cup milk
1 tablespoon granulated sugar
2 tablespoons oil
3 teaspoons baking powder
1/4 teaspoon salt
2 ripe bananas
1. Whisk all ingredients except bananas until smooth.2. Butter griddle or frying pan.
3. Using a 1/4 cup measuring cup drop batter on pan and quickly cut several thin slices of banana on top.
4. Cook until brown on both sides and cooked through.
5. Drizzle hot pancakes with warm honey and serve!
