Mediterranean-Style Crepes

Now that the weather is starting to warm up, I am starting to crave lighter, more refreshing foods for my lunches. These wraps made with crepes are both- a light, yet satisfying lunch packed with delicious Mediterranean flavors!

Mediterranean-Style Crepes

Roasted garlic hummus
Kalamata olives, chopped
Tomatoes, sliced thinly
Greek yogurt
chives

1. Spread hummus in a thin layer over the entire surface of a crepe
2. Place tomato slices and olives along one side
3. Starting on that side, roll up the crepe into a tube
4. Cut the rolled crepe in half at an angle, cross the halves, and garnish with a dollop of Greek yogurt and some snipped chives
