Adventures in Baby Food- Green Bean Puree

The very first food that I made for baby munchkin was green bean puree! Some say that you should start with a veggie rather than a fruit as baby's first food, so they don't get used to sweet things and refuse other flavors. After an exclusive diet of sweet breast milk for the first 6 months of life though, honestly I don't think it really matters that much. As you can see, they went over well! She gobbled them up, squealing and kicking her legs happily as she sucked them down as fast as I could spoon them in. Full of Vitamin C, Vitamin K, and Calcium, green beans are a great first food for baby! 

Adventures in Baby Food- Green Bean Puree
Makes 1 cup of puree

1 pound fresh green beans, washed and trimmed (or frozen)

1. Place green beans into a steamer basket in a pot with a just enough water to barely show in the bottom of the basket.
3. Steam until very tender.
4. Remove steamer basket and rinse green beans in cold water to keep them from continuing to cook. (Reserve steamer water to use for thinning the puree later.)
5. Place into a food processor or blender and puree until very smooth, scraping down the sides several times, and adding the reserved water as necessary to achieve the desired consistency. (Push the puree through a fine mesh strainer to get rid of any remaining skins or chunks if needed.)
