Honey-Lime Tilapia Tacos

Happy Cinco de Mayo! I decided to make a zesty and summery take on a fish taco for our dinner; marinating the fish in a honey-lime marinade and serving it wrapped in warm tortillas topped with a zesty lime-sour cream dressing! Talk about a fiesta in your mouth! :) 

Honey-Lime Tilapia Tacos
Serves 4

Honey-Lime Tilapia:
1 lb of fresh Tilapia fillets
Salt and pepper
juice of 1 lime
3Tablespoons honey

1. Whisk together lime juice, salt and pepper, and honey and pour over tilapia in a shallow baking dish.
2. Marinate for at least 2 hours in the refrigerator, turning over after one hour.
3. Grill for about 4-6 minutes on each side, until fish is no longer translucent and it flakes easily when pierced with a fork.
Zesty Lime-Sour Cream Dressing:
1 cup sour cream
1 teaspoon lime zest
juice of 1 lime
1/8 teaspoon ground cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon chili powder

1. In a small bowl, add all ingredients and whisk to combine.
2. Taste and adjust seasoning as needed, serve with grilled tilapia and the rest of the taco ingredients!

Additional Fish Taco Making Supplies:
Tortillas, warmed
1 ripe Tomato, diced
1 ripe Avocado, thinly sliced
1/2 head of cabbage or iceberg lettuce, washed and shredded
8 ounces mexican blend shredded cheese (if desired)

1. Set out grilled tilapia, cut into strips or chunks, the chilled zesty lime-sour cream dressing, and the additional taco making supplies.
2. Allow people to build their own tacos and enjoy!
